What do you do on busy nights when you barely have time to eat, let alone cook?

Do you head to get fast food, or grab a pizza? Have you ever thought about making a few meals to put in the freezer ahead of time?

Making meals for the freezer is easy and can be done super quickly.

And when those busy nights roll around like they always do, you can grab a meal from the freezer and dinner is ready in a snap!

My favorite way to stock the freezer quickly is to make no cook freezer meals.

This freezer cooking plan was so quick and easy! I made 12 meals in just 30 minutes.

This no cook freezer meals plan was made for just the 2 of us. So, we will have 6 dinners, 12 individual meals. If you have a larger family, you can double or triple the meals to make more.

Meals:

Chicken Fajitas – 2 servings

Parmesan Chicken – 2 servings

Italian Chicken – 2 servings

BBQ Chicken – 2 servings

Honey Mustard Chicken – 2 servings

Salsa Chicken – 2 servings

Total of 12 servings!

Shopping List:

*Keep this as frugal as possible by shopping at Aldi and using Ibotta for free cash back!

6 large chicken breasts (or 12 small) – see note below

1 1/2 cup salsa

1-2 large bell pepper(s) (or about 3-4 small peppers)

1 cup BBQ sauce

1 cup Italian dressing

1/2 cup honey dijon mustard

1/4 cup honey

1 cup Italian breadcrumbs

1 cup Panko breadcrumbs

1/2 cup grated Parmesan cheese

1 egg

Spices:

1 tsp crushed red pepper flakes (for honey mustard chicken)

All the rest of the spices are for the chicken fajita mix:

1/2 tsp each: paprika, oregano, ground cumin, black pepper, salt, chili powder, onion powder, garlic powder

Note about chicken: I use 1 large chicken breast split for the 2 of us and it’s plenty. If you have smaller chicken breasts, you may want to use 1 per serving. I like to keep our meals frugal by using less meat, and fill in with sides.

To finish the meals:

So, you will have to do a tiny bit of work to get these meals on the table. But about 80% of the work is done!

Here’s how to finish the meals.

Salsa Chicken:

Dump chicken and salsa into medium size crock pot and cook on low for 4-6 hours. Shred and stir. Serve with tortillas or chips and salsa/queso/guac.

Honey Mustard Chicken:

Thaw overnight in fridge. Grill in skillet with small amount of olive oil until done. Add small piece of cheese and let melt on top. Serve on slider buns with fries.

Parmesan Chicken:

Thaw overnight in fridge. Cook in skillet with small amount of olive oil. Serve with angel hair pasta, tomato and basil sauce, and a melted piece of provolone cheese on top of the chicken.

Garnish with fresh chopped basil from your garden if you’re feel fancy!

Italian Chicken:

Thaw overnight in fridge. Grill in skillet until done. Serve with potatoes and vegetables.

BBQ Chicken:

Thaw overnight in fridge. Preheat oven to 350. Place chicken and BBQ sauce in baking dish and bake for about 30 minutes, or until done. Serve with vegetables.

Chicken Fajitas:

Thaw overnight in fridge. Dump in skillet with small amount of olive oil. Cook until chicken done. Serve on tortillas with chips and salsa on the side (duh!) ;).
